Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50 degrees F) before fermentation
Temperature controlled during fermentation and maceration (between 80-85 degrees F)
Maceration: between 17 and 24 days on the cap with 3 pump over per day
Malolactic fermentation: 100% new oak at 70 degrees F
Aging: 100% in new French oak barrels
Length of aging: 16 months
At bottling: Alc= 15.20%, residual sugar= 1.3g/L, total acidity in H2So4= 4.2g/L, in Tartaric= 7 g/L
No fining, no filtering
Blend: 64% Syrah, 33% Cabernet Sauvignon, 3% Petit Verdot

Tasting notes:
A deep ruby colored wine, the 2003 Optimus is unique among its kind for carrying the highest percentage of Syrah to date. At 64% Syrah, 33% Cabernet Sauvignon, and 3% Petit Verdot, the Optimus 2003 is an exuberant wine. It sings with aromas of violet, wildflowers, and a high-tone floral note of muted honeysuckle. These notes mingle with a hint of leather, earth, and fresh plums, with a peppery finish on the palate. This is a wine for many diverse dishes. Excellent with grilled meats and rich risotti, but don't overlook grilled shellfish with this wine!
