2004 L'Aventure Estate Syrah
Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50 degrees farenheit) before maceration
Temperature controlled during fermentation and maceration (between 80-85 degrees farenheit)
Maceration: 18 days on the cap with 3 pump over per day
Malolactic fermentation: 100% in oak at 70 degrees farenheit
Aging: 60% in new French oak, and 40% in 1 year old French oak
Length of aging: 12 months
At bottling: Alc=16.40%, Residual sugar= 2.5 gr/L
Fined, but not filtered
Blend: 100% estate grown Syrah
Bottling: December 2005
Production: 180 6 packs, in wood cases
Tasting notes:
Only 4 barrels of Syrah were produced in 2004. Ripe, complex flavors of cassis and blueberry mingle with anise and leather notes. Velvet on the palate, following a huge attack of dense, dark fruit and big, soft tannins. Estate Syrah finishes long, with blueberries, acacia, and vanilla. Stains teeth in 30 seconds!
