Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation (between 80-85º F)
Maceration between: 24 days
Malolactic fermentation: 80% french oak, 20% American Oak
Aging: 80 % in new French oak barrels, 20% in new American oak barrels
Length of aging: 15 months
At bottling: Al = 15.9%, Total Acidity in H2So4 = 3.36 g/L, PH = 3.77, in Tartaric = 6 g/L
No fining, no filtering
