2003 L'Aventure Syrah
Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50 degrees F) before fermentation
Temperature controlled during fermentation and maceration (between 80-85 degrees F)
Maceration: between 12 and 18 days on the cap with 3 pump over per day
Malolactic fermentation: 100% oak at 70 degrees F
Aging: 80% in new French oak barrels, and 20% in 1 year old French oak barrels
Length of aging: 15 months
At bottling: Alc=15.1%, residual sugar=1.8g/L
No fining, no filtering
Blend: 100% Syrah, from several west side Paso Robles vineyards
Bottling: April 2005
Production: 445 12 pack wooden cases
Tasting notes:
Soft aromas of raspberry, tea leaf, pepper, leather and spice make this the most elegant and classic L'Aventure syrah to date. Delicate berry and violet flavors are buoyed by licorice and pepper on the palate. This wine will be a welcomed foil to grilled veggies and fish, as well as to barbecued chicken. And it's heaven with mushroom risotto!
