Winemaking:

  • Picked by hand, with grape selection upon arrival at the winery
  • Cold maceration (around 50º F) before fermentation
  • Temperature-controlled during fermentation (between 80-85º F)
  • Maceration between: 21 and 27 days
  • Malolactic fermentation: 100% new oak
  • Aging: 100 % in new French oak barrels
  • Length of aging: 15 months
  • At bottling: Al = 14.7%, Total Acidity in H2So4 = 3.22 g/L, PH = 3.80, in Tartaric = 5.58 g/L
  • No fining, no filtering
  • Blend: 52% Syrah, 44% Cabernet Sauvignon and 4% Zinfandel)
