Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation (between 80-85º F)
Maceration: 30 days
Malolactic fermentation: 100% new oak
Aging: 100 % in new French oak barrels
Length of aging: 12 months
At bottling: Al = 13.8%, Total Acidity in H2So4 = 4.80 g/L, Ph = 3.80, in Tartaric = 5.39 g/L
No fining, no filtering
Tasting Notes:
This syrah has a dark, deep ruby color. The nose
is closed at first, but it opens on a spicy note where blackberries and blueberries dominate. With powerful tannins, this is a classic wine with long aging potential.

Venison, prime meat steak, any grilled meat
