Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation (between 80-85º F)
Maceration: up to 35 days
Malolactic fermentation: 100% new oak
Aging: 100 % in new French oak barrels
Length of aging: 12 months
At bottling: Al = 14.7%, Total Acidity in H2So4 = 5.63 g/L, Ph=3.53, in Tartaric = 6.05 g/L
No fining, no filtering
Tasting Notes:
Beautiful deep ruby color; on the nose you find smoked and mineral aromas. With aeration, flavors of ripe fruit and spicy notes become more evident. This Zinfandel has good acidity with powerful tannins and great texture. All in all, this is a rich and elegant wine that should age very well.
