Winemaking:
Direct crushing in a pneumatic press
100% barrel fermented (new French oak)
Malolactic fermentation: none
Aging: on the fermentation lees with frequent batonnage until the bottling
At Bottling: Alcohol = 13.8%, T.A. = 7.35, Ph = 3.20
Tasting Notes:
Toasted bread flavor on the nose, with honeysuckle and pear overtones. It has good acidity, with full, rich body, and a long smooth finish with a note of minerality and white flowers.
Serving Suggestions:
Dover sole, swordfish or seabass; lobster or shrimp; white meat in a cream sauce (poulet à la crème or blanquette de veau)
