Picked by hand, with grape selection upon arrival at the winery
Cold maceration before fermentation: up to 30 days depending on varietal
Temperature-controlled during fermentation (between 80-85ยบ F)

Aging: 80 % in new French oak, 20 % in one-year-old French oak
Length of aging: 12 months
No fining, no filtering
Blending: 60% Syrah, 40% Cabernet Sauvignon
At bottling: Al = 13.6%, Total Acidity in H2So4 = 4.60 g/L, Ph =3.82, in Tartaric = 5.25 g/L
Tasting Notes:
Ruby color, with aromas of toasted bread, red berry. It's slightly spicy, with good texture, and ripe tannins that leave an impression of softness and delicacy. Long-lasting on the palate, this wine is well-balanced and full of vitality.
