Winemaking:

  • Picked by hand, with grape selection upon arrival at the winery
  • Cold maceration (around 50º F) before fermentation
  • Temperature-controlled during fermentation and maceration (between 80-85º F)
  • Maceration between: 24 days
  • Malolactic fermentation: 80% French Oak, 20% American Oak
  • Aging: 80 % in new French Oak barrels, 20% in new American Oak barrels
  • Length of aging: 15 months
  • At bottling: Al = 15.5%, Total Acidity in H2So4 = 3.83 g/L, PH =3.59, in Tartaric = 6.55 g/L
  • No fining, no filtering
