Winemaking:
- Picked by hand, with grape selection upon arrival at the winery
- Fruits directly pressed in pneumatic press at very low pressure
- Sedimentration of the juice during 12 - 20 hours before fermentation
- Fermentation in 100% new French oak barrels
- No Malolactic fermentation
- Length of aging: 8 months
- At bottling: Alcohol = 14.30%, Total Acidity in H2SO4 = 4.50 ga/l, Total Acidity in Tartaric: 7.1 ga/l, PH = 3.25
- Bentonite fining and light filtering
- 40% Chardonnay from "Careaga Canyon" in Lompoc, 60% Chardonnay from "Rimrock Vineyard" in Arroyo Grande
