Maceration: Syrah = 15 days, Cabernet Sauvignon = 17 days, Petit Verdot = 16 days
Malolactic fermentation: 100% new oak
Aging: 100 % in new French oak barrels
Length of aging: 15 months
At bottling: Al = 15.80%, Residual Sugar = 1.55, Total Acidity in H2So4 = 4.33 g/L, PH = 3.63
No fining, no filtering
Blend: 50% Syrah, 46% Cabernet Sauvignon, and 4% Zinfandel
Tasting notes:
Cassis, wild blackberries, and a chalky, mineral note from our west side terroir dominate the aroma. The mouth is classic L'Aventure, with deep, richly layered flavors of tea leaf, spice, dark berry, and leather sharing the stage. The long finish reveals anise and some graphite notes. Decant this wine, and it will reward you with even more complexity.
