Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation and maceration (between 80-85º F)
Maceration: 19 days on the cap
Malolactic fermentation: 100% new oak
Aging: 70% in new French oak barrels, 30% in new American oak
Length of aging: 15 months
At bottling: Al = 15.80%, , Residual Sugar = 2.14 g/L, Total Acidity in H2So4 = 4.10 g/L, PH = 3.82
No fining

Tasting Notes:
Full ruby in color, with macerated cherries, wild berries, and bramble characterizing the aroma. Big, round, soft tannins support cedar and tobacco notes in the mouth. "A classic red wine, with a Zinfandel finish," remarks Stephan.
