Winemaking:

  • Picked by hand, with grape selection upon arrival at the winery
  • Cold maceration (around 50º F) before fermentation
  • Temperature-controlled during fermentation and maceration (between 80-85º F)
  • Maceration: 19 days on the cap
  • Malolactic fermentation: 100% new oak
  • Aging: 70% in new French oak barrels, 30% in new American oak
  • Length of aging: 15 months
  • At bottling: Al = 15.80%, , Residual Sugar = 2.14 g/L, Total Acidity in H2So4 = 4.10 g/L, PH = 3.82
  • No fining
  • 100% Zinfandel West Side Paso Robles grapes
  • Bottling: April 4, 2003

    Tasting Notes:

    Full ruby in color, with macerated cherries, wild berries, and bramble characterizing the aroma. Big, round, soft tannins support cedar and tobacco notes in the mouth. "A classic red wine, with a Zinfandel finish," remarks Stephan.
