Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation and maceration (between 80-85º F)
Maceration between: 17 and 24 days on the cap
Malolactic fermentation: 100% new oak at 70°F
Aging: 100 % in new French oak barrels
Length of aging: 15 months
At bottling: Alc = 15.22%, Residual Sugar = 1.6 g/L, Total Acidity in H2So4 = 4.4 g/L, in Tartaric = 6.8 g/L
No fining, no filtering

Production: 600 x 12 wood cases
30% of the fruit comes from Halter Ranch Vineyard in Paso Robles West Side; 20% from "Ma Vigne au Soleil" in
Templeton; 20% from "Casa Grande Vineyard" in Paso Robles West Side; 20% from L'Aventure Estate Vineyard.
Tasting Notes:
A deep, dark wine, with purple tints, L'Aventure Syrah has a rich, complex nose of pepper and violets. An aggressive attack on the palate is sustained by significant tannins, with notes of blueberry, pepper and violet in the long finish. Soft and drinkable now, this wine will cellar well up to a decade.
